Research Title

“RUBY”: FROM HERBAL PLANT TO FERMENTED CARBONATED FOR SUPPORT CANCER IN MICE AND DIABETIC TYPE 2.

Research Abstract

Carbonated beverages remain among the most popular drinks worldwide; however, their high sugar content is strongly associated with obesity, diabetes, and other metabolic disorders. This study introduces Ruby, an innovative naturally fermented carbonated herbal drink formulated from a combination of bajakah wood, Kedawung seeds, lemongrass, stevia leaves, and lemon as natural sources of bioactive compounds. The fermentation process produces natural carbonation, resulting in low sugar and low-calorie content, making Ruby suitable for individuals requiring better control of calorie and sugar intake. Phytochemical screening confirmed the presence of antioxidants, flavonoids, and phenolic compounds, which contribute to enhancing immune function, protecting cells from oxidative stress, and reducing long-term risks of chronic diseases, including cancer-related cellular damage. pH analysis indicated that Ruby maintains a safe acidic level for consumption without affecting blood pH. Furthermore, in vivo experiments were conducted on mice (Mus musculus) induced with skin cancer and breast cancer to evaluate the potential therapeutic activity of Ruby. The subjects were observed for six months, and the results revealed a gradual reduction and eventual disappearance of tumor masses in the treatment groups, suggesting potential anticancer and antioxidant effects of the herbal compounds present in Ruby. A hedonic evaluation involving 500 respondents showed high acceptability in taste, aroma, and texture. Respondents with type 1 and type 2 diabetes reported no adverse effects after consumption and expressed positive feedback. These findings demonstrate that Ruby is a functional low-calorie carbonated beverage with promising anticancer and antidiabetic potential, providing a healthier alternative to conventional carbonated drinks for health-conscious consumers seeking both refreshment and wellness benefits.
